Spinach, full name Spinacia Oleracea, is a vegetable known since ancient times and introduced in Europe from the year one thousand by the Arabs. It belongs to the genus of small herbaceous plants, of the Chenopodiaceae or Asteraceae family, according to a different classification. It was grown in south-western Asia and over the centuries it has become a popular vegetable for both raw salads and cooked dishes. It does not reach excessive heights, about 30 and maximum 80 centimeters. It is characterized by round and fleshy dark green leaves, with a reddish petiolate base. The flowers have different shapes based on sex and the small and thorny fruits are used as seeds. There are several varieties of spinach including New Zealand spinach, full name Tetragona Espansa, very similar to the common vegetable, but with triangular and rounded leaves with a sweeter flavor than the classic spinach. Another variety is strawberry spinach, so called because of its fruits, very similar to strawberries, which can be eaten raw, but do not have the same flavor. All varieties of spinach are divided into winter, summer and perennial. They can, in fact, be cultivated in different seasons, through sowing. However, they do not like sudden changes in temperature and should be adequately watered. Spinach is also grown in greenhouses and intended for industrial consumption for the preparation of frozen products. This vegetable, in addition to being used in cooking, is also appreciated for its beneficial phytotherapeutic properties.


Property

The part of the spinach that is used for both culinary and herbal purposes is the leaf. For centuries, the leaves of spinach have been attributed anti-anemic and energizing properties due to the rich iron content, about 3 grams per 100 of product, which, however, due to the oxalic acid is dispersed not reaching that of other foods, such as meat. Or rather, to get the amount of iron in a steak, you should eat at least a kilo of spinach. But the beneficial effects of spinach, as far as iron is concerned, are linked to other substances contained in the plant that facilitate its assimilation by the intestine. The iron contained in spinach and in the herbal remedies and products based on this vegetable is better assimilated than the medicinal iron which can cause side effects in the stomach and intestines. Spinach also contains carotenoids which are the precursors of vitamin A. This vitamin allows the synthesis of rhodopsin which improves night vision. Spinach is very useful for eye health and vision, because it contains lutein, a substance that strengthens the retina, thanks to its antioxidant and anti free radical power. Being a green leafy vegetable, it also contains a lot of folic acid useful for preventing serious diseases of the embryo, such as spina bifida. Spinach also promotes bone development, because the vitamin A contained in it allows greater assimilation of iron which in turn enhances the metabolism of calcium, which is essential for strengthening and protecting bones. But on this point we must highlight a disadvantage always caused by oxalic acid, which counteracts the absorption of calcium. For this reason, spinach is contraindicated for those suffering from kidney stones and for those who need to heal from a bone fracture. Oxalates are also harmful to those suffering from rheumatism. Spinach also contains potassium and fiber which help regulate intestinal functions. Other active ingredients of the plant are: chlorophyll, mineral salts, vitamins C, B1, B2 and Pp, phosphorus, magnesium, carbohydrates. This vegetable is suitable for anemics and for those suffering from rickets.


How to use

To get the most out of spinach you need to consume it, taking care not to lose its precious substances. Cooking, in fact, considerably reduces the amount of vitamins and minerals of the plant. For this reason it is advisable to consume raw or cooked spinach in a little boiling water. To better assimilate the iron contained in the leaf, it is advisable to add a few drops of lemon. Spinach is also used to make poultices to be applied on the abdomen in case of constipation and digestive disorders. The poultices are obtained by mixing the raw leaves with olive oil.


Spinach: Where to find it

Spinach can be found in organic food stores and drugstores, where it is sold in packs of one kilo. The best effects are achieved when it is eaten fresh. Spinach can also be easily found in fruit and vegetable markets. In herbal medicine, but also in grocery stores, spinach is sold in powder, always in a kilo packet and costs just under two euros.
